Description
Small bamboo shoots are the young, tender sprouts of the bamboo plant, harvested early for their soft texture and delicate flavor. Unlike mature shoots, these baby bamboo shoots are naturally mild, slightly sweet, and less fibrous.
Widely used in Northeast Indian cuisine, they can be boiled, fermented, stir-fried, or cooked with smoked meat and local herbs. Rich in fiber and low in calories, small bamboo shoots are valued not only for their earthy taste but also for their digestive and nutritional benefits. Fresh shoots should be properly boiled before cooking to remove natural bitterness and ensure safety.
